  • 500 gr Watermelon chunks

  • 70 gr sugar (optional)

  • 500 gr ice cubes

Pasos

  • Traditional Preparation:
  • In a blender, place all ingredients except ice cubes and blend on high speed for 1 minute.

Notas

  • If you want to add a distinctive touch to the granita, you can add dried mint leaves or tarragon before crushing and then strain the mixture once it is crushed.

  • Another option is to freeze the watermelon beforehand and only perform the first step without adding the ice cubes. This will give a different texture to the slush.

Key points of the recipe

  1. Watermelon quality: Make sure the watermelon is ripe and sweet, as it is the main ingredient and its flavor will determine the quality of the slush. If it is in season, the better.
  2. Ice Texture: Crush the ice cubes until you do not hear the crunch of the cubes to obtain a smooth and uniform texture. Avoid leaving large pieces that may be unpleasant to drink.
  3. Flavor Balance: If you decide to add sugar and lemon juice, do so in moderation so as not to overpower the natural flavor of the watermelon. Remember that you can adjust these ingredients to taste.

Pairing with wine

Watermelon granita is a fresh and sweet summer dessert. Although slushies are not usually combined with wine, there are exceptions. In this case, a Moscato wine – a sweet and often sparkling white wine – could work well. In particular, a Moscato d’Asti from Italy might be a good choice. This variety is known for its fruity and sweet notes, which can complement the sweetness of watermelon. In addition, its effervescence and freshness can accentuate the refreshing sensation of the slush.

On the other hand, we could consider a rosé wine, especially one that stands out for its fruity flavor, to resist the natural intense sweetness of watermelon.

However, it is important to remember that food pairings are subjective and depend on individual preferences. Some people may not like to mix wine with a dessert as sweet and frozen as a watermelon slushie.

We would definitely avoid red wines, especially the stronger ones or those with high tannin content, as the rich and robust flavors could overshadow the delicacy of the watermelon.

Beer pairing

For this type of refreshing dessert with sweet and somewhat citric notes, such as the watermelon granita, a delicate pairing could be a Belgian Witbier or a Hefeweizen style beer. Both offer citrus notes and a touch of spice that can complement well the sweetness and acidity of the watermelon and lemon.

However, it is important to consider that traditionally slushies are usually enjoyed alone to cool down on hot days, so it is not mandatory to include a beer or any other alcoholic beverage with this type of dessert.

In terms of beers to avoid, very hoppy, bitter or high alcoholic beers such as IPAs, stouts or porters could overwhelm the smooth and sweet taste of this dessert and unbalance the harmony we are looking for in a good pairing.
