Ingredientes

  • 250 gr onion emincé

  • 2 garlic cloves emincé

  • 300 gr carrot emincé

  • 150 gr leek emincé

  • 100 gr celery emincé

  • 150 gr parsnip emincé

  • 100 gr emincé mushroom

  • 100 gr cabbage

  • 100 gr zucchini emincé

  • 200 gr emincé green beans

  • 150 gr turnip emincé

  • 100 ml olive oil

  • 1 bouquet garni

  • 6 liters water

Pasos

  • In a large, good-sized saucepan, add the olive oil and heat over medium heat. Then, add the onion and the garlic and sauté them carefully without letting them take color, so that they release their flavor and become tender and translucent.
  • Then add all the remaining vegetables to the pot: carrots, leeks, celery, parsnips, mushrooms, cabbage, zucchini, green beans and turnip. Cook over medium-low heat, stirring occasionally, for about 15 minutes. This will allow the vegetables to soften and their flavors to integrate.
  • After 15 minutes, add the 6 liters of water to the pot and place the bouquet garni inside. Let the broth simmer, with the pot semi-covered, for 30 minutes. This slow cooking will help extract all the flavors and nutrients from the vegetables, creating a delicious and healthy broth.
  • After 30 minutes, turn off the heat and let the broth rest and infuse for another 10 minutes. This will allow the flavors to settle and blend further.
  • Finally, strain the broth using a fine strainer to separate the vegetables and bouquet garni from the liquid. Allow the broth to cool before labeling and storing in airtight containers in the refrigerator or freezer, whichever you prefer.
