Ingredientes

  • For cigarette paste:
  • 60 gr icing sugar

  • Seeds of a small piece of vanilla pods

  • 65 gr butter ointment

  • 65 gr flour

  • 2 egg whites (approximately 80 gr)

  • For the nougat cream:
  • 2 yolks

  • 250 ml milk

  • 200 gr Jijona nougat

  • 30 gr sugar

  • 15 gr cornstarch

  • 250 ml semi whipped cream

  • For the chocolate sauce:
  • 100 gr butter

  • 100 gr chocolate (70%)

Pasos

  • Cigarette paste:
  • Start by combining the butter, icing sugar and vanilla seeds in a bowl. Whisk until a uniform mixture is obtained. Then, add the previously beaten egg whites to the mixture.
  • Finally, add the sifted flour and beat until smooth.
  • On a sheet of baking paper, draw circles of equal diameter and fill them with the prepared dough (not too thick).
  • Bake for 5-6 minutes at 180 °C. Once removed from the oven, roll them quickly to form cigarettes.
  • Let them cool and then fill them with the nougat cream. You can prepare them the day before and store them in a metal box.
  • Nougat cream:
  • Start by heating the milk with 30 grams of the crushed Jijona nougat until it boils. In a bowl, beat the egg yolks with the sugar and cornstarch.
  • Once the milk is boiling, strain it over the yolk mixture and return it to the heat.
  • When it boils again, strain it again, mix it with the rest of the crushed nougat and, once cold, combine it with the semi-whipped cream.
  • You can prepare the cream a day in advance and store it in the refrigerator.
  • Chocolate sauce:
  • Simply melt the butter and chocolate together, either in the microwave or over low heat in a saucepan.
  • Assembly:
  • Place three cigarettes filled with nougat cream on a plate and bathe them with the delicious chocolate sauce. Enjoy!

Notas

  • Cigarette rolling: Work quickly after removing the circles of dough from the oven. They harden quickly as they cool, so it is important to roll them right away to get the cigarette shape.
  • Butter cream: Make sure the butter is soft enough (but not melted) to integrate easily with the other pastry ingredients.
  • >
  • Semi-moistened cream: The cream must be very cold to whip properly. You can also use a chilled bowl to aid in the process.
  • >
  • Serve: Cigarettes are best when served immediately after assembling, as the paste will retain its crisp texture. However, if you are preparing them in advance, you can store the unfilled cigarettes in a metal box and the nougat cream in the refrigerator. Fill the cigarettes and add the chocolate sauce just before serving.

Key points of the recipe

  1. Quick rolling: After baking the cigarette dough, it is crucial to act quickly to roll them while they are still malleable. If they cool too much, they will become brittle and you will not be able to shape them as desired.
  2. Ointment butter: Make sure the butter is at room temperature and has the consistency of ointment so that it mixes well with the sugar and vanilla, without being melted, to obtain a homogeneous paste without lumps.
  3. Semi-whipped cream: The cream must be very cold before whipping to achieve the proper semi-whipped texture. This is essential for the nougat cream to have the correct consistency when mixed with the rest of the ingredients.

Pairing with wine

This dessert is rich, with a sweet flavor profile and notes of chocolate and nougat. Therefore, it is ideal to pair it with a wine that can complement these flavors without overwhelming them.

An ice wine would be an excellent choice. This type of wine is made from grapes that have been frozen while still on the vine. The result is an incredibly sweet and rich wine that can stand up to the strong flavors of chocolate and nougat. An ice wine made from Riesling or Vidal grapes would be especially appropriate, as these wines tend to have notes of stone fruit, peach and apricot that would complement the flavor of the nougat.

Alternatively, a Ruby Port wine could also be a good pairing. Ruby Ports are fortified wines, which means that brandy is added during the fermentation process. This results in a wine with a high alcohol content and a sweet, rich flavor. Ruby Ports usually have notes of red fruits and chocolate, which makes them a perfect complement to this dessert.

I would avoid pairing this dessert with dry white or tannic red wines, as these could create too strong a contrast with the sweetness of the dessert.

Beer pairing

Pairing beers with desserts can be a bit more complicated due to the wide variety of beer styles and flavors. However, for a dessert like cigarettes filled with nougat cream and chocolate sauce, I would look for a beer that has enough body and sweetness to match the dessert.

A Stout or Porter style beer, especially one with chocolate or coffee notes, could be an excellent choice. These beers tend to have robust, malty flavors that can complement the richness of the chocolate and nougat cream.

A Belgian Dubbel or Quadrupel style beer could also work well. These beers are usually quite sweet and have notes of dark fruits and spices that could enhance the flavors of the dessert.

I would avoid pairing this dessert with bitter or sour beers, such as IPAs or Sour Ales, as these styles could clash with the sweetness of the dessert.
