Avocado ice cream is a delicious and healthy alternative to traditional ice cream. With a soft green color and creamy texture, this ice cream will not only surprise your palate with its unique and refreshing taste, but will also provide you with the nutritional benefits of avocado, such as healthy fats, fiber and antioxidants.

It is ideal for those who are looking for more natural and nutritious options without giving up the pleasure of a good ice cream. At home, I always make this ice cream in the summer because it delights both young and old.

Ingredientes

  • 3 ripe avocados

  • 400 ml very cold whipping cream

  • 2 t.s. tablespoons lime or green lemon

  • 1 t.c. teaspoon vanilla

  • 30 ml honey

  • 30 gr date syrup

  • 50 gr marcona almonds for decoration

Pasos

  • Without Thermomix
  • Place the avocados, date syrup, honey and tablespoons of lemon in a blender and blend on high speed for about one minute or until everything is dissolved. We can add about 30 gr of milk to make it easier to grind.
  • Next, with a stick blender, whip the cream in a separate bowl until stiff, but without over whipping. Make sure it is not yellow in color.
  • Next, add the ingredients from the mixer to the bowl and beat with the whisk on medium speed until all the ingredients are integrated. We taste the sugar and if we like it more sugary, we can add a little more honey.
  • Put the mixture in an elongated tupper and take it to the freezer where we will let it cool for 30 minutes.
  • After 30 minutes, stir the ice cream with a spoon and return to the freezer.
  • Repeat this process until the ice cream texture is creamy and free of crystals.
  • It is recommended to leave it out of the freezer for 10 minutes before consumption or to pass it through a blender for a few seconds at medium speed.
  • With Thermomix TM6
  • Put the butterfly in the Thermomix mixing bowl and then add the cream and maple syrup.
  • Program speed 3 and a half without time. By the vowel we can check when it is assembled. Make sure it is not yellow in color.
  • Set aside in a bowl.
  • Next, put the avocados, dates, honey and tablespoons of lemon in the Thermomix mixing bowl and program 1 minute on speed 10.
  • Next, add the ingredients from the bowl to the Thermomix and beat on speed 3 and a half until all the ingredients are integrated. We taste the sugar and if we like it more sugary, we can add a little more honey.
  • We put the mixture in a long tupper and take it to the freezer where we will let it cool in periods of 30 minutes. After 30 minutes, stir the ice cream with a spoon and return to the freezer.
  • Repeat this until the ice cream texture is creamy and without crystals.
  • It is recommended to leave it out of the freezer for 10 minutes before consumption or to pass it through a blender for a few seconds at medium speed.

Key points of the recipe

  1. Avocado selection and preparation: Use ripe avocados to ensure the creaminess and flavor of the ice cream. Mash them well with the date syrup, honey and lemon until you obtain a homogeneous mixture, without lumps.
  2. Whip the cream correctly: The cream must be very cold before whipping and you must whip it until it is stiff but without overdoing it to prevent it from turning into butter. The texture of the cream is key to the final creaminess of the ice cream.
  3. Freezing and stirring: To avoid the formation of ice crystals and to ensure a smooth texture, stir the ice cream every 30 minutes during the freezing process. If possible, before serving, let the ice cream stand at room temperature for 10 minutes or run it through a blender to improve its consistency.

Pairing with wine

The soothing, smooth flavors of this avocado ice cream do not pair particularly well with wines, either red or white. The avocado has a creamy, rich taste, and the addition of the honey and date syrup make it slightly sweet but not in a strong or overpowering way. In contrast, many wines may have strong flavors and acidity that could interfere with the subtle flavors of avocado ice cream.

However, if you would like to drink wine with this dessert, you might consider sweet and light dessert wines, such as an Italian Moscato or a late harvest German Riesling. These wines are sweet but also balanced in their acidity, which can complement the sweet flavors and creamy nuance of the ice cream without overwhelming it.

Be sure to avoid strong and robust red wines such as Cabernet Sauvignon, Shiraz or aged red wines, these tend to have oaky notes and tannins that do not pair well with avocado ice cream.

In any case, it is always important to remember that wine pairing is very subjective and depends on the individual palate. The most important thing is to enjoy the food and drink, and experiment to find your perfect combination.

Beer pairing

This avocado ice cream, due to its characteristics and its creamy and fruity flavors, could pair very well with a Witbier or Hefeweizen style beer. Both styles are light and refreshing wheat beers, with citrus and fruit notes that could both complement and contrast with the creaminess and sweetness of the avocado ice cream. In addition, Witbiers often have seasonings such as orange peel and coriander, which could provide an interesting counterpoint to the smoothness of the vanilla and honey.

In contrast, it would be advisable to avoid pairing this dessert with very strong or bitter beers, such as India Pale Ale (IPA) or Stout, since their bitterness and roastiness could overshadow or conflict with the subtle and delicate flavors of the ice cream.

In any case, beer pairing is largely a matter of personal taste, and the most important thing is to enjoy both the food and the drink. If you have the opportunity, I advise you to try different styles of beer with the ice cream and see which one you find more pleasant.
